recipes for your green, unripe, end - of - season tomatoes that don't involve frying or
pickling, you've probably realized they're few and far between.
It being Midsummer, I had prepared a Scandinavian - inspired meal consisting of the cucumber salads I shared
recipes for last week; salmon and
pickled herring; an assortment of cheeses from Norway, Sweden, and Denmark; and dill - and parsley potatoes adapted from Molly Wizenburg's blog; among other treats.
I stumbled upon a similar taco

for a pretty presentation, but you can simply slice them before
pickling.
I can not find a
recipe for canning or preserving the pods short of
pickling them in vinegar.
Luckily I have access to many great pantry
recipes: sauces,
pickled or roasted vegetables, and crunchy, crispy things that will all keep
for a week and are all versatile enough to be tossed into all types of dishes.
For instance, Koulax used all - beef hamburger patties, hand - sliced beefsteak tomatoes, fresh chopped white onions, dill
pickle chips and a special
recipe all - beef chili that was made fresh daily.
