If you think the recipe needs a kick (like I suggested) chopped onions, a few
pickled jalapenos finely minced or a squeeze of fresh lemon juice would
do the trick!
don't forget the
pickled jalapenos!
Well, now I have some idea what I might actually
do with a jar of
pickled jalapenos besides eating them two or three slices at a time on tacos!
If you don't want to buy a can of chipotles in adobo sauce for just the one or two called for in this recipe, substitute fresh or even
pickled jalapenos.
I followed the recipe exactly, except that I didn't have any green chiles on hand, so subbed with
pickled jalapeno juice (and some
jalapenos for good measure!).

did have
pickled jalapenos in the refrigerator though and I started thinking of how I could use the
jalapenos to stuff the mushrooms and use the Gallo Family Vineyards Merlot and still have it taste good.
I use chunky and medium spicy salsa so that every one can enjoy the same dinner - I mean those who don't like spicy and also those who like spicy (with some
pickled jalapeno on side).
