with real pumpkin puree, those classic pumpkin
pie spices (if you don't have a pre-blend, which I got from Trader Joe's, then
mix together two - parts cinnamon to one - part of each cloves, allspice and nutmeg), and subtly sweetened
with maple sugar.
I filled the churro
pies with a boxed pudding
mix.
Here's what I changed: I used a 15 - oz can of pumpkin (not
pie filling — just pumpkin puree) in place of the bananas; I swapped out the spices for about 1 tsp each of cinnamon and ginger, and
mixed those in
with the pumpkin first; I opted for the larger volume of maple syrup from the original recipe, as the pumpkin wouldn't contribute sweetness the way the bananas do; I baked the batter as a dozen standard muffins, which took about 20 minutes at 350.

mixed with dulce de leche.
In a blender or
mixing bowl
with a hand
mixer, blend the powdered cashews, pumpkin, sugar (to taste), oil, maple,
pie spice, vanilla, cinnamon, and salt until smooth.
Mix the egg and cream in a small bowl and brush it on the
pie crust strips then sprinkle
with the coarse sugar.
With the stand
mixer on slow, add in your dry ingredients one at a time: sugar, pumpkin
pie spice, salt, baking powder, and xanthan.
I seriously have to agree
with you about those 2 - 3 ingredient things that are constructed from a box
mix and the commercial
pie filling as «2 - 3 ingredients».

In a medium bowl (or stand
mixer with paddle attachment), whisk the eggs, add in the greek yogurt, pumpkin and pumpkin
pie spice and whisk until smooth.

pie dough at least 2 hours ahead that way it has plenty of time to chill.
Baker Stefania Rubicondo brought these wonderful individual
pies, filled
with a
mix of sweet celery root, brussels sprouts and parsnips in a sage - infused cream sauce and topped
with tender biscuits made
with roasted sweet potato.
That is how I have had it also,
with chunks of some type of
pie crust on top and a little
mixed into the soup.
