use your fingers to shape the dough into the plate and repair any boo - boos that might have occurred during the transfer.
I just love the sound of this

I have never
used rye flour in
pie crust — I have
used whole wheat
pastry flour.
I was thinking about experimenting with
pastry using these flours — I figure that the lower gluten content isn't an issue in a
pie crust?
Lay the rolled out puff
pastry dough in the prepared tart pan (a shallow
pie dish works well too) and trim the edges
using the edge of a rolling pin rolled across the top.
I usually
use my favorite
pie crust recipe, which I have previously posted, but I decided to try a
pastry recipe by the Barefoot Contessa.

As «village dough» is a little bit difficult to find, you can either make this traditional Greek leek
pie recipe
using either commercial phyllo dough, puff
pastry or, if you are feeling adventurous enough, make your own homemade phyllo with this easy recipe for homemade phyllo for beginners.
Bake any remaining
pastry leaves alongside the
pie,
use for decoration.
When I am teaching folks how to make
pie dough or biscuits, I find that novices have the best results when they learn the grating method first; once they see what it should look like they can decide to
use a
pastry blender or a fork / knife to cut in the butter.
I
used this filling with my husband's home - grown fresh blueberries and the all butter
pie pastry.
Easy to make even without a food processor (
used a
pastry cutter and then my fingers), neutral flavor that lends itself to different

When
using puff
pastry, don ¿ t oil the baking dish and rather than oiling the top of the
pie, brush it with an egg wash, which is one egg, lightly beaten with a splash of water.
An easy batter is made with either all purpose or white whole wheat flour (I
used whole wheat
pastry flour and nobody even knew it was whole grain), eggs, milk (I
used almond milk), boiled cider (I had 1/3 the amount so subbed some honey for the remainder), brown sugar (I
used coconut sugar), vegetable oil, pumpkin
pie spices and leavening.
My mom makes a mean
pie crust, and I learned what I know from her, but we've always
used a
pastry cutter to cut the butter into the flour.
Transfer the
pastry to your
pie or tart pan and,
using your fingertips, evenly press the
pastry onto the bottom and up the sides of the pan.
Sometimes I
use a graham cracker crumb crust but my favorite is this buttery crisp Shortbread Crust that makes enough
pastry for either an 8 or 9 inch (20 to 23 cm)
