Have you missed enjoying a soft, warm, slightly charred
piece of naan with your Indian Food?
Divide the roasted sweet potato between the two
pieces of naan bread and mash with a fork to evenly cover.
My husband has decided to be obsessed with Indian food these days so chicken tikka masala simmers on my stove while I dream of spiced winds, tearing off
pieces of naan and dipping it to sneak a taste.
Equally spread butter on one side of
each piece of naan bread (preferably bubbly side).
FOR THE CHICKEN BURGERS 1 lb ground chicken 2 green onions, diced 2 tbsp fresh ginger, grated or finely diced (forgot this at the grocery and used about a teaspoon of dried ground ginger) 2 tbsp fresh lemon juice 1 1/2 tsp paprika 1 - 2 tsp ground cumin 1/4 teaspoon cayenne pepper Coarse salt and fresh ground pepper, to taste 6 - 8
pieces of naan 1 cucumber, sliced thinly (optional) fresh cilantro (optional)
Arrange 2 chicken patties on
a piece of naan and top with yogurt sauce.
Remember the flavorful curries, and dipping
your piece of naan bread in to mop up the last possible drop of creamy goodness?
Tear
a piece of naan bread in half and then run it through the toaster for a bit (one half in each slot, obviously).
Place
a piece of naan bread on the under side of the cast iron pan.
Who knew that a piece of wild Alaskan salmon and a yogurt raita from southern India, accompanied by
a piece of naan, could land on the same plate and have a decent conversation.
To serve, layer the yogurt atop
each piece of the naan, then the avocado mixture, cucumber salad and a fried egg.
Make the Naan Pizza: Spread 2 tablespoons kale pesto onto
each piece of naan.
Brush
each piece of naan with a little olive oil and grill each side to crisp it up and make nice grill marks.
Then add 6 small spoonfuls of ricotta cheese on top about 2 inches apart on
each piece of naan.
Preheat oven to 350 degrees F. Lay
the pieces of naan bread on a cookie tray.
Brush
a piece of naan with olive oil on one side and sprinkle with salt.
Place
a piece of naan bread on the under side of the cast iron pan.

I spoon this deliciousness over some jasmine rice, and include
a piece of naan for scooping it up (Trader Joe's has a vegan naan that is perfect)!
I have my regular coffee, followed by two
pieces of naan and hummus.
