To assemble the fajitas, sprinkle a tortilla with cheese, add some rice, the pork and then
the pineapple slaw.

When you make
the pineapple slaw, did you use plain Greek yogurt (or what flavour)?

And if you are not into the fajita part just serve the pork over the coconut rice with
the pineapple slaw.
I also cut down on the mayo as I find it to be very overpowering and I wanted to fruit in
the pineapple slaw to shine.
