2 medium - large white, baking or Yukon gold potatoes, peeled (reserve skin) and cubed to make 3 cups 1 tablespoon olive oil 1 tablespoon vegan butter (I
like Earth Balance) pinch of salt 1/2 teaspoon of Liquid Smoke 3/4 cup chopped onion (medium fine) 1/2 cup chopped celery (split stalks lengthwise and slice crosswise fairly thinly) 1/2 teaspoon dried thyme 1 teaspoon kelp granules (you could try powdered kelp, though I haven't tested it) salt and freshly ground black pepper to taste 3 cups vegetable broth, warmed in the microwave or in a saucepan 2 cups unsweetened soy milk, also warmed in the microwave or in a saucepan (may combine with broth to heat) 1 cup coarsely chopped homemade «seafood seitan» (see below) or Shitake or oyster
mushrooms, sauteed in a skillet with 1 - 2 teaspoons olive oil for 2 - 3 minutes over medium - high heat, seasoned to taste with granulated kelp (in

Variation: Use other vegetables in
place of the ones suggested here — try corn kernels, diced carrots, bell peppers, green beans, sliced
mushrooms, yellow summer squash — whatever is available and whatever your family
likes.
Neither of us
like mushrooms, so in
place I add sauteed green bell pepper and red onion (our favorite pizza toppings!).
In
place of white wine,
like to add a splash of dry vermouth for a nice herbal note and sometimes add cremini or shiitaki

More happy winter foods include those with Vitamin D,

like using a
mushroom to boost or
placing bananas in the road for other players to slip on.
Instead of fighting Bowser and his army of Koopas, this time Mario, Luigi, Peach and Toad are
placed in a similar, yet different, setting called Subcon (also known as «the land of dreams»), that was once a lovely
place for living and a real wonderland, just
like the
Mushroom Kingdom, but it is now ruled by the giant frog king called Wart, and peace is no longer residing in this area.
The result is a self - contained world, devoid of people (despite a model of the U.N. building suspended in a tree) but heavy on neon lights,
mushrooms, and oily black stalactites, evoking the subterranean realms of caves as well as the more metaphorical depths of newer hidden
places like the Deep Web.
