This looks delicious, I have some bulgar wheat at the back of the cupboard and had been wondering what I could do with it (I make a summery lamb and mint salad with it, or use it
in place of breadcrumbs in meatballs), I think I'll give this a go.
I will sometimes use stale bread, tear it up and soak it in milk or water, then wring it out and use that in
place of breadcrumbs.
You can use it in
place of breadcrumbs in your meatballs, to dredge a piece of chicken, or to thicken a sauce or stew.
The crispy, crunchy tempura kale in this salad takes
the place of breadcrumbs, adding a filling bite that will have you going back for more.
Try them in oatmeal, a smoothie, in a healthy pie recipe, in
place of breadcrumbs in a casserole, or sneak a handful into another one of your favorite next holiday desserts!
We made meatballs using Bob's Red Mill's dehydrated potato flakes in
place of the breadcrumbs and put those on top of some spaghetti squash with tomato sauce.
We use old - fashioned rolled oats in
place of breadcrumbs to sneak in some whole grains.
Example (what I did today): Used butter beans (didn't have great northern); added a handful of fresh spinach with the carrot; added a garlic clove; a few onion slices (in place of scallion)-- crushed up crackers in
place of breadcrumbs....

I know of another who liked it when using cooked quinoa in
place of the breadcrumbs (I'm not sure if this fits within your diet).
