I used grapeseed oil in
place of coconut oil because of an intolerance.

(For reference, I used Bob's Red Mill Gluten - free Flour instead
of Debbie's flour mixture [only
because I had some on hand], and Earth Balance Soy - free Butter in
place of sunflower butter, honey instead
of coconut nectar, and olive
oil in
place of coconut oil.
Raw cacao powder can be used in
place of regular cocoa powder and expeller pressed
coconut oil can be used in
place of virgin
coconut oil (some do better with expeller pressed
because it's easier to digest).
I just pulled these out
of the oven and they are delicious!!!! I didn't have high hopes
because I used canola in
place of the
coconut oil and tapioca starch instead
of potato starch but these are easily the best chocolate chip cookies I've ever had and I'm not even vegan.
It is also great for all sorts
of roastings
because the food stays soft inside and crunchier on the outside And here's one trick — I usually
place coconut oil in the oven while it's warming up, to melt it:)
