I did make a few changes; used coconut flour in
place of quinoa flour, coconut sugar in place of brown sugar, & coconut milk in place of almond milk (I guess you could say I love coconut!).
I'm not telling you to give up quinoa — I love the stuff — but it's nice to mix it half and half, or use it in
place of quinoa from time to time.
If you want to keep them gluten - free, you could use rice flour in
place of the quinoa flour or regular white flour if you don't need them to be gluten - free.

I just made it with a few alterations... rolled oats in
place of quinoa, all fruit on the bottom and I made a brown sugar crumble on top (1/2 c flour, 1/2 cup brown sugar, 3 tbsp butter).
Used some broccoli instead of squash, and farro in
place of quinoa and put it over rice noodles.
Oat groats can be cooked into porridge or used for heartier grain dishes in
place of quinoa or rice.
Use it in
place of the quinoa.
I ended up using the main recipe as a base and tried another option with soaked quinoa and oat flour in
place of the quinoa / rice flour (half cup soaked quinoa to about 3/4 cup oat flour), half the oil and a quarter of the sugar and they came out really good
So I used a cous cous left over in
place of quinoa, mixed seeds, leek in place of onions, no dill.
You can definitely leave out the quinoa — either use 2 cans of black beans or add some brown rice in
place of the quinoa!
