Arrowroot will work in
place of tapioca just fine!

just use all purpose flour in
place of the brown rice and
tapioca flours.

just pulled these out
of the oven and they are delicious!!!! I didn't have high hopes because I used canola in
place of the coconut oil and
tapioca starch instead
of potato starch but these are easily the best chocolate chip cookies I've ever had and I'm not even vegan.
Anthony, if you can manage to use cornstarch (
just sub more cornstarch in
place of the
tapioca flour), I think that will give you the best result.
