You can use 1/2 — 3/4 tsp garlic powder in
place of fresh garlic.
Substitute one tablespoon roasted garlic in
place of the fresh garlic.

Cover the bottom
of a roasting pan or baking tray in olive oil and
place the tomatoes, peppers with the
garlic,
fresh rosemary, dried thyme, bay leaves, salt and a drizzle more olive oil on top.
Here's a topping idea that won me 1st
place in a local pizza contest: a little bit
of purchased alfredo sauce, sliced mushrooms sauteed with
fresh thyme, caramelized sliced onions, spinach sauteed with
garlic and top off with some crispy cooked, crumbled bacon (cook the mushrooms in some
of the bacon fat)....
Used cashew yogury, added

fresh kaiser rolls instead
of hamburger buns.
Drain and rinse the chickpeas and

Place raw carne asada in large bowl and add
garlic, salt, pepper, balsamic vinegar, 1 tablespoon
of fresh lime juice, orange juice, basil leaves, honey, olive oil and 1/2 cup
of red onion to meat.

In the summer, I make a variation
of this using blanched field peas
of any variety, and I substitute thyme for the spring herbs and
fresh garlic in
place of the early green
garlic of spring.
Place crumbled tofu, diced onion,
garlic,
fresh herbs, tahini, ground almond, juice
of one lemon, 3 tablespoons
of cornmeal, salt and pepper to a food processor and blend until smooth.
