If you are avoiding soy you could certainly use seitan or add extra veggies in
place of the tofu.
Assemble tacos -
place some of the tofu / veggie mix on the tortilla, followed by soyrizo, cilantro, avocado, jalapeños and salsa.
Imminently adaptable and riffable: Use any leftover protein or shred a rotisserie chicken in
place of the tofu, and use whatever crunchy vegetables you've got in the produce drawer.
I love eggs, so I scrambled some in
place of the tofu, and used garam masala instead of the tandoori spice since that's what I had on hand.
