You can serve your vegan wraps as I did, the super low - carb way, by
placing some filling atop a large kale
leaf (
Romaine lettuce
leaves also work well for this purpose, as would a chard
leaf, if it's big enough), or you can use this as a filling for vegan burritos, by scooping some into whole wheat, spelt, corn or other tortillas.
To serve:
Place meatballs on
romaine leaves, top with fresh mint or cilantro, diced scallions, and sriracha.
Place steak cubes, peppers and cherry tomatoes on a skewer,
leaving room for the
romaine and cheese on the end (but do not add them yet).
Grab your prepared coconut wrap and
place your
romaine lettuce
leaf on it and put a layer of shredded crab on top of that.
Separate the
romaine heart
leaves and
place in large bowls.
Brush the
romaine leaves lightly with oil, then
place on grill, turning once.
If you want to serve them in a style more similar to traditional fajitas, try swapping out
romaine lettuce
leaves in
place of tortillas to keep the calories low.
To assemble the falafels, take a large
romaine leaf and
place three falafel balls inside.
To assemble the lettuce wraps,
place 3 meatballs on a
leaf of
romaine.
Stuff it into a hollowed - out pepper,
place it in lettuce
leaves, or spread it on top of fresh
romaine or arugula, as I've done here.
Place 3 organic
romaine leaves on a plate, add turkey mixture and top with diced bell peppers.
