skyr for some reason doesn't cause the stomach issues for me that I discovered too much dairy can do, and the
plain flavor is the best around, as are the mixed berries and the pumpkin and coconut!
Swap sour cream or mayo for
plain yogurt or
skyr (we're fans of siggi's dairy, which is low in sugar and made with simple ingredients).
Spread each waffle with
plain Greek yogurt or
Skyr, ricotta, or cottage cheese, and then top with your favorite sweet or savory additions.
