I've never baked with
plantain flour so I've got no idea how it might influence the baked good.

I didn't have enough almond
flour left,
so I added
plantain flour as well as a bit of sweet potato
flour.

plantain flour here
so I can't really test it, you will have to just try and see.
I do
so using almond, tapioca, cocnut or homemade
plantain flour and a natural sweetener such as real Maple Syrup or local honey.
