Imagine this: roasted red pepper cashew cream with a fresh bite of basil and slightly salty, meaty prosciutto, all nestled into soft and sweet
plantain tortilla, cut into «lil party - sized poppers.
I made
the Plantain tortillas the other night with fajitas and they held up pretty well.

I had an amazing Cuban
tortilla at a restaurant in Portland OR that had fried
plantains & roasted garlic added, too.
If your
plantains were tough to peel they may be dry, add additional water 1 tbsp at a time, too thin and the
tortillas won't come together properly.
But, the next time I'm there I'm looking for the almond flour
tortillas and
plantain chips.
Pork,

These vegan tacos start with homemade corn
tortillas, which form the base for a grilled
plantain and salsa verde filling.
Plantain chips are a wonderful alternative to corn
tortilla chips in this easy and flavorful Mexican breakfast.
Spread heaping 1/4 cup
plantains on bottom half of each
tortilla, leaving 2 - inch border.
2 cups fresh masa (corn dough for making
tortillas) or 12 small premade corn
tortillas 2 medium semi-ripe
plantains, peeled 1 tablespoon garlic - infused oil Grated peel and juice of 2 limes 1 teaspoon salt 1 teaspoon ancho chile powder 11⁄2 cups salsa verde 3⁄4 cup toasted pepitas 2 cups shredded red cabbage
Grab a
tortilla and place 2 or 3
plantain slices in a row just off center, then spoon about 2 tablespoons of the tofu in a strip over the
plantain slices.
Roll the
tortilla up, pressing firmly to roll it tightly (and squishing the
plantain slices a bit if needed), and place it seam - side down in the baking dish.
Add the bread,
tortilla, onion,
plantain, garlic and tomato and cook, stirring occasionally, until golden - brown, 8 to 10 minutes.

Remember that the resistant starch comes from cooking and cooling the
plantains, so be sure to serve your
