I used frozen packaged
plantains as that's all i could source and they worked well — used 400g or 5 small plantains that apparently were between green and ripe (hard to tell as purchased peeled).
We might think of
plantains as unripe bananas but as far as I understand, they're a different variety from what we in the US eat as bananas (and sometimes the plantains are cooked ripe, called maduros).

plantains as a base.
As a whole, I did» t see what all the hype was about with
plantains as the flavor profile was less sweet than a typical banana yet provided a similar texture.

plantains as a side when I make Caribbean curries or jerk - but that is totally different.
You'd never even know that the recipe uses dates and
plantains as sweeteners from tasting this treat.
