Spread a couple tablespoons of the sweet
potato mixture on each tortilla, and top with the
bean / pepper

Then I mashed the
mixture with a
potato masher, making sure to leave some whole
bean pieces throughout for a nice texture.
Specialities to look out for include Borek; a thin, flaky pastry wrap filled with meat, cheese or
potatoes, Pilaf; a dish of rice or cracked bulgar wheat with added chick peas, aubergine,
beans or peas which is a traditional staple of the Turkish diet, Yaprak Sarma; vine leaves stuffed with rice, onion and spices and Karnıyarık; fried aubergines filled with a
mixture of mince, onion, parsley, garlic and tomato.
When the
potatoes are cool enough to handle, add them and the
bean mixture to the bowl with the dry ingredients, and mash it all together with your hands to form a soft dough, making sure there are no dry parts remaining.
4 Add the
beans, tomato purée and tamari to the sweet
potato mixture (you may need to add another splash of water if it looks dry, although you are aiming for a thick chili).
