Some foods are certainly more trendy than others, but I'm still making sweet potato toast years after the buzz has worn off and I'm sure I'll continue to make these sweet
potato egg nests as well.

Indian cooking rarely uses
eggs as a binder so to make sure the patties don't break, soaked bread is added to the
potato mixture.
GF flour blend (mine has chickpea,
potato starch, tapioca, sorghum, and fava)-- 1c and 2Tbsp cold water — 2

There are tons of good Whole30 breakfast recipes with
eggs and so many without
eggs at all, including smoothies and one dish skillet recipes which a lot but
not all are sweet
potato hash recipes.
Sweet
potatoes, coconut flour,
eggs, butter, and raisins — you can't really go wrong with these ingredients, right?
You might need to make the
potato walls a little more distinct to hold in the
eggs — I just pushed things apart with my fingers because the yolk sac settles right into the dent, which the liquid
eggs may or may
not do without thicker walls.
1/2 cup butter or dairy - free alternative, * room temperature 3/4 cup brown sugar, packed 1/4 cup granulated sugar 1 large
egg + 1 large

Remove the
potatoes from the oven and crack one
egg into each of the wells you created earlier, taking care
not to break the yolks or let the whites run too far from the well.
The
eggs didn't seem to cook along with the
potatoes, so there was a raw
egg taste.
So this means that
not only can one have pancakes, but can feel safe that their
potatoes and
eggs are
not covered in gluten!
I actually considered making a Paleo version of
eggs florentine but then I realized that florentine referred to spinach which I can't have so instead of making a convoluted version of
eggs + kale «florentine» I just decided to scrape the idea and stack together this
potato, kale and drippy
egg deliciousness!
