My ultimate goal with this recipe was to create a sublime tasting chocolate brownie that's completely sugar free and ideally sweetened solely with sweet
potatoes (or
kumara as we call them in NZ).
As I'm from New Zealand, I grate some of our lovely
kumara in the crust, it's really nice, most of you will know it as sweet
potato.
Simply roast a couple of golden
kumara (aka orange sweet
potato) in the oven with olive oil, pure maple syrup, fresh ginger, a little cinnamon and pumpkin seeds.
All you need is a some
kumara (aka sweet
potato) and some cashews, and from there you simply flavour them up with whatever herbs or spices or you have.
I see
kumara (nz native sweet
potatoes) with sausage gravy in my future!
They also make award winning crisps using
kumara, a New Zealand sweet
potato.

potato)-- one of the higher dietary sources of potassium in NZ.
I only count calories in
potatoes, pumpkin,
kumara + corn.
