If you want a low carb or paleo option
for this soup I found sweet
potato starch
noodles in the asian grocery store.
This one is essential
for making those all delicious veggies
noodles, sweet
potato, zucchini, carrot, etc..
You can swap the thyme with cilantro
for a tasty kick, or even try sweet
potato noodles instead of zucchini.
I prefer to use rice vermicelli
for an authentic texture, but feel free to use spiralized vegetables (like zucchini or yellow squash), or sweet
potato noodles, depending on your preference.
I found a way to sub cabbage
for noodles in spaghetti, and sweet
potatoes for noodles in lasagna.

Then, add in broth,

for 10 minutes or until
potato noodles are al dente.
Its excellent gelling properties make
potato starch a choice starch
for meat products and
noodles.
Add spiralized sweet
potato noodles and cook
for 2 - 3 minutes, gently folding up from the bottom of the pan a few times.
The clarity of
potato starch in solutions is an important feature
for clear soups, gravies and glass
noodles.
I have used this recipe a number of times to make chicken and
noodles with
potatoes, and the flavor is so perfect, I'm thinking about using it
for some soup this time.
there is no real translation
for its name but we call it «mohnnudeln» which can be freely translated into

I made an utterly mouthwatering dinner today based on a recipe on The First Mess (spaghetti squash
noodle bowl with lime peanut sauce), although I swopped out the squash
for what I had in the house (orange sweet
potatoes and carrots).
Chicken and Mushrooms are tossed in a Garlic White Wine Sauce and then served over top of mashed
potatoes,
noodles, or rice
for a complete weeknight meal.
Add sweet
potato noodles and sauté
for five minutes, or until
noodles become slightly tender.
Add some sweet
potato noodles on there
for a more filling meal and you'll be good to go.
Sweet
potatoes make
for a delicious (and super nutritious)
noodle.

For example, I fell in love with the cauliflower and cheddar soup (seriously run out NOW and get this) so I might even make this into a yummy pasta sauce over zucchini

I adapted Jenn's recipe a bit to make use of what I had on hand: I couldn't find sweet
potato vermicelli (the type of
noodles generally used
for chap chae) so I substituted mung bean cellophane
noodles; I added tempeh
for protein (you could try small pieces of organic chicken, pastured pork or grass - fed steak instead, if you like) and topped the dish off with homemade sriracha.
