I make a lot of pasta

With your rolling pin
pound the cold
butter to soften it a little.
Sprinkle the
butter with a few teaspoons of flour during this process — some of the liquid in the
butter will bead up on the surface as you
pound and the flour helps absorb this.
Gently
pound the top of your dough
with your rolling pin, starting in the center and working to the sides to smooth out the
butter inside your dough.
This time I only used 1/2
pound, but I usually make it
with 1
pound of
butter.
