prefer, or as a component of a veggie
bowl, or even crumbled on a
salad.
Eating big
bowls of
salad is something I'm known for, but in the winter when all I want is hot food, I
prefer to have little helpings on the side of warm dishes.
If you
prefer, you can serve it all in a large
salad bowl, toss with with the ranch dressing and call it done.
To assemble
salad, grab a large
bowl & toss 5C arugula, 1 / 2C warm quinoa, baked broccoli, 1/2 avocado diced & 1 / 2C drained chickpeas — toss with
preferred amount of dressing (I had a ton left over for future
salads) & serve!
You can add the vinaigrette to the serving
bowl and toss, but I
prefer to let others control the amount of dressing on their
salad.
If you
prefer to have the soup as a starter you could pair this with my sweet potato and chickpea
salad, quinoa power
bowls, sweet potato tofu burger, or avocado chickpea
salad for a full meal.
That way I avoid using another dish that I will inevitably have to clean, but if you
prefer to have a more evenly mixed dressing you could whisk it all together first in another
bowl or make a whole batch to save in a jar for future
salads.
