I've made three variations so far and they're all
pretty great — the one with
peanut butter and sunflower seeds is a basic cupboard - staple option with a
sweet caramel undertone, cocoa with cherries is always a lovely combo and satisfies my
sweet - tooth quite perfectly, and the mandarin - pistachio - cranberry - goji is the most colorful and sparkles with fruity flavor.
At breakfast I tend to crave more of the
sweet stuff (think smoothie bowls, banana pancakes,
peanut butter toast) so by lunch I can totally get down with an omelette OR this
pretty gem no problem.
On the other hand, it's rich and creamy and slightly
sweet, and apples and
peanut butter are a
pretty magical combination.
When you take my favorite food in the world [
peanut butter], combine it with a
sweet, ripe banana and a handful of greens (you know, to make it semi-healthy and give it a
pretty color), you have yourself a tasty breakfast, snack or post workout shake.
If you are a
peanut allergic Scout, reduce the sugar slightly (Sunbutter is already
pretty sweet) and use Sunbutter (if that is a safe seed
butter for you) and you can have a similar cookie to try.
