The one with sundried
tomatoes sounds delicious, would
probably be yummy too with some
roasted peppers.
Our main standbys are
probably: fagioli all» uccelletto — tuscan bean /
tomato / sage stew, basically posh beans on toast, very quick and easy to make from tinned beans dal - roti - shaak — any simple dal, a spicy vegetable (often
roasted cauliflower or stir - fried cabbage) and frozen parathas (which are amazing), with yoghurt and chutney on the side pasta with some sort of veg plus feta, olive oil and lemon.
If I were to do anything differently, I would
probably replace half the
roasted red peppers with oil - packed sundried
tomatoes.
Would
probably add garlic and double the
tomatoes possibly
roast them beforehand and maybe red pepper flakes.
Avocados, asparagus,
roasted red peppers, beets, artichokes, heirloom
tomatoes, and cucumbers are all great options, though
