I have been enjoying homemade Vegan Chocolate Avocado Pudding for over a year now, but it is one of those recipes that seems so easy to make that I have been hesitating to put it up on the blog... Not because I think it is too obvious to share, on the contrary, I think people are quite surprised by the idea of making
pudding out of avocados.

I was skeptical
of the
avocados in sweet stuff ever since I tried making chocolate
pudding with them and a NOT powerful blender... I'm sure you can imagine how that turned
out lol.
I eat
avocados straight
out of their skins with a little pink salt and lime, make guacamole with them, use them in salads and «bowls», use them in dressings in place
of mayo to give LOTS
of creamy richness, I make
avocado pudding pretty regularly, and I even bake with them now!

I added 2 dates instead
of stevia, little more liquid (for the chia seeds) and almond butter (
out of coconut oil / butter)... I usually have an
avocado pudding for breakfast (sometimes add squash) < 3
And I'm a firm believer that tofu and
avocados don't belong in
pudding (keep the black beans
out of my brownies and applesauce
out of my cookies, too, please).
