The addition of the flavoured
cream transforms the
pumpkin soup into something quite remarkable, although the Thai - style flavours do seem a little at odds with the rest of the French - inspired menu.
Roast in a preheated 375 degree F. oven for 7 to 10 minutes or until the seeds are lightly browned and crispy.You can garnish this
soup with a variety of different options such as a dollop of light sour
cream, a spoonful of diced pears and chopped roasted chestnuts sauteed until tender, some chopped fresh greens such as watercress, or with a sprinkling of roasted crisp
pumpkin seeds as I used in the photo.

To coincide with the attempt we created the world's first «ice
cream soup,» a bowl of steaming hot
pumpkin soup with a scoop of
pumpkin ice
cream dropped in the middle.
In the end we ran out of time to stage the world - record attempt, and killed off ice

Personally I love the «comfort food» kind of
pumpkin soup and I love adding maple syrup,
cream and other wonderful ingredients to bring out the flavor of the
pumpkin.
