Made this several tiimes last fall — this time I roasted butternut and
pumpkin and some onions to make the sauce, added some frozen peas to the
pasta and some shrooms mixed it all together and threw
in a lassagna
dish, topped with breadcrumbs.
I absolutely love
pumpkin but honestly never thought to use it for anything other than desserts or maybe
in a
pasta / sage type
dish.
Add to

in butter and use as a garnish for risotto or
pumpkin dishes.
