I've seen many other
pumpkin syrup recipes that have still very little pumpkin in them (or too much pumpkin so it would be way too thick!)
Not exact matches
I created my own
pumpkin porridge
recipe this past autumn but never thought to add pecans and apples to it (I called it a day after adding maple
syrup and cinnamon; — RRB --RRB-.
Maybe it's because we typically use maple
syrup in fall
recipes like my small batch
pumpkin spice granola and in the maple whipped cream I use to top my sweet potato pie for one.
Among things I change on occasion are: — Olive oil instead of coconut oil — Honey instead of maple
syrup — Replacing some of the flour with chickpea flour — I never tried the millet actually but have instead always added
pumpkin seeds which complement the babana marvelously — I always cut down on the sugar in half (I generally do so in
recipes) and I dislike cloves so no.
Here's what I changed: I used a 15 - oz can of
pumpkin (not pie filling — just
pumpkin puree) in place of the bananas; I swapped out the spices for about 1 tsp each of cinnamon and ginger, and mixed those in with the
pumpkin first; I opted for the larger volume of maple
syrup from the original
recipe, as the
pumpkin wouldn't contribute sweetness the way the bananas do; I baked the batter as a dozen standard muffins, which took about 20 minutes at 350.
I only made a few slight changes to the
recipe: added a splash of vanilla extract, used a tablespoon of pure maple
syrup instead of the stevia, and substituted 1/2 tsp of
pumpkin pie spice for the cloves.
