Drain the water from the cashews and add them to a food processor, alongwith the vanilla extract, pumpkin pie spice, salt, pumpkin puree, stevia, and 1/4 cup cacao powder, and remaining coconut oil.
Add the fruit mixture and SCOBY puree to a blender, alongwith the spices if using, and pulse until the mixture has the texture of applesauce and all the ingredients are combined.
