Measure 1 1/2 Cup of
the pureed plantain and transfer to a mixing bowl.
Pureed Plantain (ripe or green)-- Both green and ripe plantain puree can add substantial hold to a recipe (yep, fiber).
Puree your plantains in your vitamix (I use this vitamix) or food processor (I use this food processor)
Just be sure to peel and
puree the plantain before you freeze it to make the process easier.

plantain is going to result in a slightly different amount when
pureed, is to ensure that you have exactly 1/2 cup.
I have found the Vita - Mix to work the most efficiently, try
pureeing half the
plantains and water at a time in a less powerful machine.
Add the cinnamon stick,
plantains, pineapple, and the
pureed sauce.
In a food processor
puree 1 green
plantain, transfer mixture to a bowl once blended smooth, and set aside for later use.
Back in the food processor, pulse together the tigernut flour, apple flour, sea salt, maple sugar, and 1/2 cup
pureed green
plantain.
When making the
plantain puree, you may need to stop the food processor and scrape down the sides a few times.

I've never
pureed a ripe
plantain out of pure laziness but I will be trying this, as you know I'm never short on
plantains I also have the exact same doughnut / donut pan as you and yes it was super cheap and it's awesome.
