flour has a lower protein content than other «all -
purpose» white
flours and that is what makes the difference in tenderness in
biscuits, pie crusts and quick breads.

biscuits as they are, because the lamination process, which is similar to the method to creating a flakey croissant, requires high quality unsalted butter and all -
purpose flour.
