If you'd like to double the kale, I think it would work fine; there was plenty of room in
my Pyrex casserole.
Since I don't really like a crunchy or thick crust, I don't preheat my dish (I use
pyrex casserole dishes with the lids), and when it comes out, I butter the top & bottom for a softer crust all over.
I've made quite a few loaves of this bread using my covered
Pyrex casserole dish.
