I served them with some home -
made quacamole, organic lacto - free mozzarella cheese, spelt bread, with a side of butternut squash soup and pineapple for dessert.
Spread some
more quacamole onto the other half of the muffin and enjoy!
snow bound so I substituted... Had no breadcrumbs so I used Pepperidge farm herbed stuffing mix, also mozzarella and provolone cheese blend, iced with trader joes
tableside quacamole.
I looked up a quick
basic quacamole recipe and popped that and some sour cream on top like you suggested with some corn chips, and it was a delicious combo!
Fill tortillas with cabbage,
pea quacamole, chicken, pickled onions, and additional toppings, if desired.
Also making
some quacamole as a dipper.
For
the quacamole — 2 ripe avocados, pitted and peeled — 1 small onion, chopped — 1 clove garlic, chopped — juice of 1/2 lime — salt, pepper — fresh coriander, chopped
I love adding it to
quacamole.
You can't see much of the spicy hamburger meat under
the quacamole.
