I used
quinoa flakes as I didn't have any
quinoa flour and I didn't have any coconut oil (I ran out 2 nights before due to a intense coconut oil hair treatment:P) so I just ended up leaving the oil out all together and made it an oil - free version!

quinoa flakes instead of the millet.
I love using
quinoa flakes but they
do have a different texture and flavor than oats, and
quinoa flakes are quick cooking so sometimes it makes the recipe work differently.
The topping
does call for oats though — you can either use very pricey certified GF oats, but I also bet that
quinoa flakes would work just fine here.

quinoa, 2 tsp olive oil, 2 cups vegetable broth, 2 cloves garlic, 4 cups spinach rough chopped, 1/8 tsp red pepper

They don't require any flour which I love, and start with a base of creamy cashew butter, which has been sweetened with local honey and an overly ripe banana, then mixed with a combination of chewy oats, light
quinoa flakes, toasted coconut and omega - 3 packed chia seeds.
But I also like
quinoa flakes because unlike oats, they don't make the recipe feel heavy, and they add just a touch more protein.
