My tips for
quinoa are (1) soak
quinoa in cold water beforehand to get rid of the bitter taste; (2)
toast your
quinoa — it tastes nuttier; (3) use a bit less than a 2:1 liquid:
grain ratio, as more water makes for soggy
quinoa; (4) cook in vegetable stock instead of water and add in flavorings like smashed garlic, peppercorns and fresh thyme or rosemary sprigs.

A while ago my friend Amanda (it's her amazing and florescent carrot butter on that little whole
grain toast in the background) introduced me to a pre-made
quinoa tabbouleh salad at Costco, it had extra bells and whistles, like mung beans and brown rice, but it was lacking something so I decided to re-create it at home.
1 tablespoon extra-virgin olive oil 1 bunch green onions, chopped 3/4 teaspoons fine -
grain sea salt 1 cup / 6.5 oz / 185 g
quinoa, well rinsed and drained 2 cups water 1/4 cup / 1 oz / 30g dried currants 1 lemon 2 sm - med zucchini, grated on box grater 4 tablespoons

Add the
quinoa and cook, stirring occasionally, until the
grains dry out and
toast a bit, roughly another 3 minutes.

quinoa thrown in to the mix, and scrambled eggs rolled up in a whole wheat tortilla.

Quinoa Salad
With a nutty,
toasted flavor and a texture similar to a smaller
quinoa, amaranth is an easy swap in
grain bowls, and it makes a breakfast porridge worth waking up for.
Do you
toast the
quinoa flour in a skillet yourself, like you would a
grain?
Serve with cooked sweet potato, carrots, a bit of
quinoa or 1 slice of sprouted -
grain toast.

I reduced the rice, replaced part of the
grain with
quinoa, replaced the chickpeas with steamed edamame and way upped the volume of beans, and swapped out pecans for chopped
toasted almonds.

toasted nuts (e.g. sunflower seeds, almonds, pine nuts) 6) combine 1) through 5) in a bowl and toss together
Add the drained
quinoa and cook, stirring, for 1 minute to
toast the
grains and evaporate any remaining water.
Step 3) Put the
quinoa in a large, dry frying pan and
toast over a medium heat, stirring often, until the
grains smell «nutty» and turn a shade darker.
