sweet potato quinoa chili packed with beans, fiber and other good stuff!
Smoky,
sweet, chipotle - seasoned, VEGAN
chili with black beans,
sweet potatoes, corn and [optional]
quinoa.
I can so totally do
sweet potato and
quinoa in my
chili.
I seasoned both the
sweet potato and
quinoa with a combination of
chili powder and cumin, and there is a generous amount of cilantro in the bowls because I seriously can't get enough of the stuff!
Add
quinoa, beans, corn and cinnamon stick; cover and cook for 30 minutes more and until the
sweet potatoes are fork tender and the
chili is thick.
Some things that are missing: Coles brand tomato sauce (says vegan on the bottle), Coles brand soups - Mexican Bean flavour,

chili, loaded with black beans,

sweet potatoes, is becoming a go - to in my house as the temps drop and I find myself with fewer and fewer hours in my day.
