Our family likes Sausage and Peppers served on it's own with a

quinoa, polenta or gluten free noodles.
The flavors of roasted beets,
sweet potatoes, peas, kale, and
quinoa meld together so perfectly to create the ultimate healthy
salad.

I served my Turmeric Chickpeas with
quinoa, spinach and avocado
salad, sauteed peppers, baked
sweet potatoes and tomatoes and fresh herbs.

We had phyllo wrapped asparagus (a la Paula Dean... no shame here), pancetta - gruyere
sweet potatoes (probably MVP of the meal and also most likely to give you a heart attack but totally worth it), sourdough bread stuffing, brussel sprouts with pancetta (yes, that's the second time I've said pancetta... again, no shame), and my creations, pear - pomegranate - goat cheese - pecan
salad (duh), and my
quinoa risotto.

Add in
sweet potato chunks roasted in lime juice and paprika, cooked tri-color
quinoa, cilantro, organic tomatoes, avocado, olive oil, and spices... and voila, a superfood spinach
salad is born.
With fresh cilantro and scallions to balance out the heaviness of the other ingredients this
sweet potato quinoa salad comes together perfectly on this warm day.
Luckily that is all past us, so today I finally was able to get creative in the kitchen and came up with a new one to add to my collection of vegan
sweet potato recipes — this
sweet potato quinoa salad with black beans.

when we got back to the house, I put together this Mexican
quinoa sweet potato casserole and a
salad.
Fifty percent should be low - starch veggies like broccoli, asparagus,
salad fixings, 25 % lean protein (chicken, fish, beans, nuts or seeds), and 25 % gluten - free whole grain like brown rice or
quinoa, or starchy veggies like
sweet potato.

Sometimes it can be as simple as getting people to start their menu planning with the starchy dish (are we going to have

salad, half a bunch of broccoli, steamed kale with balsamic / dijon dressing, etc.) and then lastly what small side of meat to have with it.
