I made these this weekend and the only change I made was to use coconut palm sugar with butter and cinnamon for the filling and left out the
raisins and nuts because I wanted to make them
into a carmel roll.
Oh, also — my friend told me about a trick for adding
raisins so that they don't fall out, and that might work for the apple chunks, too: After dividing the dough, roll each one
into a long, flat oblong.
