This quick and easy mango and
cucumber raita with lentils packed with wholesome ingredients is sure to energize your morning.
So, while
making raita, make sure you use the salted, unflavored plain boondi.
I surprised my family by making something totally new and different for dinner recently - butter chicken (recipe to post soon) and this cucumber
yogurt raita salad.
I have also shared some variety recipes with curd such as curd rice,
onion raita which are not in the form of sweets but can be eaten with rice and now sharing this traditional sweet dish known as shreekhand.
And a bowl
of raita made with cucumber, sweet onion, or carrots would be good.
Or add some cumin, cilantro and a chopped serrano pepper and you've got beet

If you want a soft on bite
boondi raita, add the boondi to the yogurt mixture and refrigerate it for at least 30 mts before serving.

Fijian Raita Goat Curry — Fiji Style Kokoda (Fijian Spicy Fish) Squash and Chana Dhal It was a bone cruncher, a teeth chatterer, a real kidney shaker.
I recommend serving
raita along with this dish, as it helps cut the intensity of the spinach a bit.
