The sweet potatoes do have to be orange and unsweetened
cocoa powder is different to
raw cacao
so you would have needed about triple the amount listed in the recipe to get the right flavour!
The beauty of these chocolates really lies in the rich authentic taste of the
raw cacao
powder and the cacao butter, both just have such deep flavours that are
so unlike any of the processed
cocoa you buy.
So feel free to use either a

powder (arguably more nutritional perks here) or a Dutch - processed alkaline
cocoa (our favorite if it's Valrhona).
