I was planning
on making
salads + spaghetti but my stomach just wasn't settled and I was afraid lots of
raw vegetables would make things worse.
I love munching
on raw sunflower seeds; I toss them into
salads, smoothies, pasta sauce and any other recipe where the deliciously mild flavor will enhance.
You turned ALL of us
on to
raw kale
salad!
Mothering.com has a great recipe for «Emerald City
Salad» —
raw, chopped kale tops a bunch of chopped vegetables (red cabbage, red pepper, fennel, and parsley, I think), and then a potful of wild rice lays
on top to wilt the greens.
All I needed
on this
salad was a fresh squeeze of lime, but you can drizzle some
raw honey
on top if you like too.
This
salad is a crunchy,
raw counterpoint to a rich Passover meal, and while some seeds are not eaten
on Passover, pumpkin seeds are okay, since a pumpkin is not a legume.

I wanted something lighter, so I went with the
Raw Taco
Salad (pictured below
on the bottom left).
The
salad on the side was field greens dotted with thinly sliced cucumber, halved grape tomatoes, and sliced,
raw button mushrooms (I am in the camp that hates
raw button mushrooms
on salads, but I know some people enjoy it — I just push them aside).
The broccoli slaw in this gives it a leg up
on other chicken
salads since you're getting the nutritious benefits of
raw broccoli.
Summer Squash Herb
Salad (Adapted from The
Raw 50) 1/2 cup sun dried tomato — soaked for 2 hours, drained, and chopped 2 tablespoons olive oil 1 tablespoon white onion (optional)-- minced 1 tablespoon fresh oregano — minced 1 tablespoon fresh basil — minced 1 tablespoon fresh dill or lemon thyme — minced 1 teaspoon salt 2 zucchini — sliced
on a mandoline or any way you like 2 yellow summer squash — sliced
This
salad can easily be adapted depending
on your dietary needs and the
raw flax chips are a great way to enjoy chips if you can't have traditional corn tortilla chips in your diet
Cauliflower Tabouli: For this dish, we're putting a
raw spin
on cauliflower and making a delicious vegetable
salad that doesn't involve any cooking.
I now have a container of
raw pumpkin seeds or pepitas in my refrigerator at all times, and I throw them into my morning hot cereal,
on top of soups and
salads, or simply enjoy them as a snack.
* If you're concerned about the pungency of the
raw onion, you can squeeze the lemon juice

However, spring is when thinner and more delicate baby carrots are sweetest and most vibrant, not to mention chock full of vitamins A, C, and K. To highlight these sweet, crispy carrots, I like to snack
on them
raw or make this Sweet and Spicy Sesame Carrot
Salad.
My favorite recipe to use this corn
salad on is Vegan Burritos with
Raw Vegan Taco Meat.
It was so tasty spread
on Pura Vida
raw bread with Dijon, capers and rocket
salad that I was very tempted to make it again.
Noting that «34 % of packaged
salad purchases are used for something other than
salad, 27 % as a
raw ingredient in something else (like a sandwich or a wrap), 7 % is baked into recipes (like soups), 4 % is cooked
on its own (steamed, sautéed), and 3 % is used in juices and smoothies.»
I thin it out with water or lime juice and use in as as dressing
on my
salads, eat it as a dip, top homemade tortillas in it,
raw green beans are my favorite!
Make extra sauce because you will want to pour it
on everything: fish, chicken,
salads, roasted and
raw vegetables.
The flavorful Maple Cinnamon Vinaigrette was inspired by the dressing
on this fabulous
raw butternut squash
salad.
This
salad is a riff
on one that Georgia made last week — thinly sliced
raw broccolini with cooked lentils, all smothered with a more - ish, sweet and lemony tahini dressing.

on the go snack.
First at bat, a
salad with spinach, red bell pepps, edamame,
raw cauliflower, and dried cranz (with a heavy handed pour of Bragg's liquid aminos
on top).
You can enjoy your
raw vegan egg
salad as a
salad, or as a topping
on crackers or cucumber rounds.
I also served the
salad on a bed of lettuce instead of spinach because we try to avoid
raw spinach due to its high oxalate content.
I love kale with poached eggs and although I enjoy
raw kale
salads such as this, I think your version would be wonderful sautéed with eggs
on top.
