So sorry but I haven't tried this recipe without the
avocado before and sadly there isn't a
good enough substitute for this as you
really need it for the creaminess!

In answer to your questions I don't believe in counting calories, as I explain in the food philosophy section as all these foods are so
good for you and so easily digestible that you don't
really need to think about calories if you always eat this way — you can't for example equate the calories of an
avocado and a chocolate bar!

avocado could be a
good substitute yes, I haven't tried it with
avocado so let me know how it goes!
Avocados actually do freeze
really well!

best part is because of the tangy cilantro and creamy

really won't even notice this fiber - rich fakeout isn't the real stuff.

avocado thing sounds like a
really good idea all around, so I'm going to go ahead and say everyone should do this, regardless of cheese consumption).
Unfortunately I've found that there are far too many myths floating around in terms of what's
best, what's dreadful, what should be organic (there's
really no reason to buy organic
avocados, for example) and what does and doesn't matter.
If you have leftover rice in the fridge, ripe
avocados, and a busy day ahead of you, this makes a
really good hearty breakfast to get your day started.
They also store
really well so save the pico de gallo,
avocado cilantro lime sauce, tortillas, and spicy shrimp in separate containers and break out the
best left - overs ever.
