For some reason, I keep getting
a really gummy texture with this flour.
Banana flour will not work here unfortunately, it would give the cupcakes
a really gummy texture.

Using 100 % oat flour will usually result in
gummy texture (though it depends on personal taste
really), so if you wanted to follow Ella's recipe and it be less
gummy then you could add some almond flour and tapioca (and decrease the oat flour!).
While I've heard that flaxseeds can taste a tad fishy, I
really didn't notice a big difference when I added them to my oatmeal, other than that they made the
texture a little more
gummy.
Really curious if it would be good, all of the other flours I have tried the biscuits had an almost
gummy texture.
My husband says the
texture is too
gummy and he doesn't
