When you consider this

has 1/4 cup
sugar for 4 servings, that's probably
less then you
would sprinkle on a bowl of oatmeal or any other cereal.

have modified it over the years to

It's light, not too dense, nor too sweet (I say that because I like
less sugar in every sweet thing I eat, and I usually put
less sugar in my cakes too — but I knew that the
sugar in this
recipe would help get the cake all fluffy and so I went ahead), it's moist of course, and simply delightful.
Anne's
recipe has a great ratio for fruit to
sugar to thickener that works well for almost any fruit pie filling (1 cup to 1/4 cup (
less for very sweet fruit) to 1 tablespoon, respectively), although I used cornstarch rather than flour as the thickener, as I prefer how it gels more translucently than flour, which can be a bit cloudy.
I like these cookies just as much as I like good old chocolate chip cookies (Tollhouse cookies) but compare this
recipe to a standard chocolate chip

has half the fat, 1/2 cup

has LESS oil and
LESS sugar than the original.
I haven't tried substituting ingredients in this
recipe, but you could tried adding
less sugar or substituting the
sugar for honey!
Most of the zucchini
recipes I
have see online
have lots of
sugar in them, so I was on a quest to develop a
recipe with
less sugar and more healthy.
The other thing that's different about this
recipe from lot's of others you'll find is that it
has significantly
less sugar.
That said, we
have moved toward using more coconut
sugar in our
recipes, because it
has been shown to
have less impact on blood
sugar.
Although his
recipe is quite sweet, so I
'd recommend adding
less sugar if you don't like a very sweet mulled wine.
Often when
recipes claim to be
sugar free it really means that they
've replaced cane
sugar or another refined
sugar with dried fruit or brown rice syrup or some other form of
less processed
sugar.
The original
recipe I found on Allrecipes called for 2 1/4 cups of
sugar which seemed like a lot even though they didn't taste overly sweet and now I
have decreased it by 1 cup (I
have also tried making them with even
less sugar but the blueberries were just too tart).
Author Notes: When I was playing around with the idea of writing a low -
sugar book, I
had one and only one priority: the
recipes had to be so good and so delicious that you could serve them without announcing the caveat that they were made with
less sugar.
Thus I decided to
have my go at slightly modifying this
recipe to
have less sugar.
I changed the non-dairy milk to coconut milk (which doesn't curdle well but it still works, I
had to use a non-nut milk because the muffins were going to a nut free environment), I doubled the
recipe, and I used agave instead of
sugar (trying to reduce our
sugar intake and wanted a
less sweet muffin).
This eggnog
recipe has less fat and
sugar than the traditional version, but it's still lusciously rich and creamy.
It also
has far
less sugar and fat than many other
recipes.
