I can't wait to see her new book because I've heard of making cool
recipes in cupcake pans but I haven't had the chance to try any out.

Line a 12 - hole muffin
pan — 1/3 cup capacity each cavity — with paper cases (you'll get 10
cupcakes from this
recipe; fill the empty cavities with water before placing the
pan in the oven).
I usually make this
recipe in a 9 x 13 baking
pan, but if you make
in in a 9 inch round such as I did as seen
in the photos, you will have extra batter to make about 6
cupcakes.
Since we're not using oil
in this
recipe you'll need to line your
cupcake / muffin
pans with liners.
for future, do you think this
recipe would work if you put it
in a square
pan and baked as brownies instead of

cupcake trays?
I was thinking that maybe a picture of the batter before it goes
in to the
cupcake pan might help some of us feel a little better about some of the differences we don't know to expect with paleo style
recipes.
The original
cupcake recipe just makes a half dozen, so
in order to fill up a cake
pan you need to do some ingredient multiplication.
Since I don't have a lamb shaped cake
pan, I decided to pay homage to that cake by preparing a similar
recipe in cupcake form — sans eggs and dairy, and complete with naturally colored coconut sprinkles.
I followed the
recipe exactly except that I made mini muffins
in one
pan and baked corn dogs
in the other
pan (I poured the dough into regular sized
cupcake moulds and then plunged 2 pre-heated (boiled) hot dog halves into each before baking).
