Since becoming a vegan, I have worked with family recipes to
recreate flavors and textures without using any animal products and I love the challenge.
[I'm not even really sure why I cared about something being low - calorie or low - fat, but it probably had something to do with the media:)-RSB- It never occurred to me that most of the time the reason certain foods are able to be «low - calorie» or «low - fat» is because companies remove certain parts of whole foods and then use chemicals and additives to
recreate the flavor and texture of those whole foods, but just without the calorie or fat.
It took many, many versions to
recreate the flavor and texture that I remembered.

flavor and hearty
texture, it's hard not to love this
recreated raw Italian dinner.
So I attempted to
recreate it at home,
and in the process, modified it a bit, by skipping or replacing some of the ingredients, but the final version tasted just as good, with the same explosion of
flavors and textures you get at each bite.
After all these years of
recreating my childhood favorites to be more tummy - friendly, I've realized that only 2 things matter;
flavor and texture.
I wanted to
recreate that
texture and flavor without the use of white flour or powdered sugar, so I used fiber rich dates to naturally sweeten
and bind these «cookies,» then added arrowroot to provide flour - like quality.
