I buy bob's
red mill out of convenience, but I think Coconut Secret makes it fluffier.

red mill flour almond for this recipe and it turned
out great.
Subbed the bob
red mill's gluten free four 1:1 baking flour, used extra oil in place of milk and some goat milk yogurt because that's what we had and still turned
out great!
maybe because i used bob's
red mill meal / flour and my eggs were straight
out of the fridge.
If you don't really feel like lazing it
out, like me, and you want to create your own Old Bay - style spice mix, do the following: Mix 2 tablespoons celery seed, 1 teaspoon salt, 1/2 tsp dried yellow mustard seed, 1/2 tsp
red pepper, 1/2 tsp black pepper, 2 dried bay leaves, 6 whole cloves, 6 allspice seeds, & 1/8 tsp cardamom seeds in a spice
mill.
P.S. - I just substituted the flour for Bobs
red mill 1to1 all purpose gluten free baking flour and it turned
out great.

Just to let you know I've made this many times using Bobs
Red mill brand blanched almond flour and it has come
out perfect.
We pass our tomato sauce through it, we put my baked potatoes through it instead of a ricer for making gnocchi, we press fish stock through it to squeeze all the flavor
out of every little bone, and we do something else with it that's not very traditional, actually: We slice the nicest parts of the fish loin and belly for our
red snapper crudo, and then we push all the trim through the fine holes of the food
mill to end up with a kind of fish tartare.
I also think that potato starch could be swapped with cornstarch... but if you use the Bob's
red mill, just go ahead and swap
out the ap flour mix and xanthan for the flours listed.
