A
red onion is a type of vegetable that has a purple or reddish skin and is commonly used in cooking to add flavor or a pop of color to dishes.

Try adding a few thinly
sliced red onions with the arugula, or perhaps your favourite salad dressing in lieu of olive oil (I use pear & blue cheese vinaigrette).
This recipe also makes a fabulous crowd pleasing appetizer by using it to drizzle over top of roasted chicken topped
with red onion slices wrapped in lettuce.
